Sweet potato mash recipe

As requested here is the recipe below:

6 sweet potatoes, peeled, chopped into chunks
6 carrots, peeled, and chopped into chunks 
1 aubergine chopped
2 onions chopped
2 bulbs of garlic
2 tablespoons of ginger
170 ml of red wine
pinch of rosemary
pinch of thyme 
Handful of cheddar cheese 
  
first of all, boil the sweet potatoes in water for around 30 minutes on a low heat. Afterwards mash the potatoes with either butter/margarine/oil and yoghurt with herbs.Put this to one side 

Following this in a big pot add some oil, then add onions, garlic, ginger, herbs. Mix this together for a couple of minutes. Then add the carrots, and the wine, leave to simmer for around 45 minutes. if there is less liquid left in the pot during cooking, add some more water to prevent this from burning. 

Meanwhile while the carrot mixture is cooking , place the chopped aubergines in the oven with a pinch of salt, and black pepper. Leave in the oven for 30 minutes, turning over to the other side halfway during cooking

Once the carrot mixture is done (when the carrots are soft) place this on a baking tray, add the aubergines, then add the sweet mashed potatoes on top, add the grated cheese. Place this in the oven for around 30 minutes

Serve this hot or can kept left overnight in the fridge, or can be kept in the freezer.
