Chicken curry recipe

Hello everyone, hope you are all doing great. Its really cold, well that's an exaggeration ha , its just windy, and a slight bit of rain. 

This week I have been in the mood again to cook, which is great because as you know I love to demonstrate my skills in the kitchen (regardless whether they are fantastic or not, it is just about the thought process, and the execution of it that counts)

I was watching a cookery programme, cannot remember the name now, but they were making curry, and I thought let me adapt this with what i have , and see if i can do a miniature/budget version of this.  This is what i had already in the kitchen 
  • coriander
  • onions
  • garlic
  • ginger
  • coconut oil
So the items that i needed to buy were:

  • curry paste
  • chicken breasts
  • aubergine (did not really like, but i love aubergine) 
  • Chick peas

I then started by marinading the chicken breast with the curry paste. Left it in the fridge for a few hours. 
I fried the onions, garlic, ginger for 5 minutes with the coconut oil. I then added the left over curry paste from the jar, continued to fry this for extra few minutes. I then added the chicken breast, fried for 5 minutes. I then added water with the aubergine and chick peas, and left everything to simmer for about 20 minutes
I served this with cooked rice
