Taking care and keeping busy

In the recent announcement of the Government for us to stay home during this difficult and challenging time, I have recently been thinking about how on earth I am going to keep myself busy, happy and my brain ticking during this period. Because we are all not sure how long this would be, I spent the first week of the lockdown literally just watching catch up TV. But then I done that all...and then I started overthinking about worse case scenarios.
So I started speaking to friends and family, and then I had that light bulb moment...I decided to try new things that I normally wouldn't do. It was cooking.
Now you are probably thinking but I do cook anyways why on earth would I say that, but I want to cook more meals that are different, challenging but healthy as well. I really want to keep up with eating better, and eating  less processed meals
So that is what I have been doing this week.
So I started watching Jamie Oliver's keep cooking and carry on. It's a brilliant show, great meals for inexpensive price, but also you swap things for others if you don't have them. This is the difficulty at the moment because people were stockpiling stuff ( thank goodness that's stopped now because it was just ridiculous and selfish)
One of the meals is the chicken roast with vegetables. I have attached the picture. In total it takes an hour to make. Fifteen minutes preparation time, then it all goes in the oven for an hour. This tasted really nice, will definitely do this again

As of the 5th April 2020 the death toll for the virus has rapidly increased, so please please stay at home and only go out if necessary

I really want to take this opportunity to thank our wonderful NHS for striving on to fight this despite lack of equipment, support and funding, we wouldn't be here without you

  1. My husband watches Jamie Oliver so much that he started doing everything around the kitchen, I think that i might forget to cook until this all is over.

  2. I cooked so much since this all begun that i gained 10 pounds, I taught that i was making healthy choices but it seems that i eat to much of those healthy choices.

    1. So have I Nevaeh, but don't forget to exercise as well, it does improve wellbeing and mental health. There are alot of Apps , some for free where you can do this at home. Good luck!

  3. My husband has been making pancakes and eggs for breakfast every morning and my kids are becoming accustomed to a standard I am not prepared to maintain after he returns to work.

  4. I am really glad that i finally have time to provide for my family a home cooked healthy meals, I am just scared that we will go to the old habits after all this finishes.

  5. I bought so much flour when all this started and i didn't make bread neither once. So much about my cooking during corona and becoming better at it.

  6. I try to eat vegetables to boost my immune system during all this situation with covid. I think certain raw foods are by far the healthiest choice, but all food must be cleaned before eating.

  7. Since all this started i became a really good cook, although i never taught i would. I really enjoy it. For the next month my goal is to learn how to bake.

  8. I see everyone is eating and gaining weight, but i decided that i want to lose weight during all this. I have been making healthy meals and doing some excesses. We need to find something positive in all this.

  9. I stockpiled so much stuff that i don't know what to do with them now, those are essential but still you can't make anything without some other things that i don't have.

  10. It was so surreal to me when the governor officially announced our stay at home order. It felt like the plot to a scary movie. It feels better knowing we are all in this together.
