Love your leftovers

So I found some mackerel that was frozen so I thought I'd leave it out to defrost, and have it with some sweet potatoes. I then decided to use some courgette into the mix also.
Leftovers are great, as they save money but also if the right choices are made, it can also be a healthy meal. 
Sweet potatoes are great for fibre, but also great for vitamins b and c, for immune system and for the maintenance of cells in the body.
Mackerel is great for omega 3 and 6 fatty acids, so great for the building blocks of cells , but also to help maintain heart health. 
Courgettes are also great for potassium for the maintenance of red blood cells, and finally have a high amount of vitamin C in them.

So why not challenge yourself and try a meal using leftover food in the cupboard and in the fridge. I might try this myself again
